KITCHEN: Learn How to Cook Delicious Jollof Rice with This Easy Recipe

Preparing authentic jollof rice may appear challenging, but it's straightforward once you've assembled the necessary ingredients.

Ingredients:

  • 2 cups of rice
  • 1/4 cup of vegetable oil
  • 1 finely chopped onion
  • 2 red bell peppers (Tatase), blended into a smooth paste
  • 3-4 large tomatoes, blended into a smooth paste
  • 2-3 cloves of minced garlic
  • 1 teaspoon of minced ginger
  • 2 teaspoons of thyme
  • 2 teaspoons of curry powder
  • 2 teaspoons of white pepper
  • 2 bay leaves (Ewe Bunkun)
  • 2 cups of chicken or vegetable broth (Omi Ibọ adiẹ)
  • 1 cup of green peas and 1 cup of diced carrots (optional)
  • Salt to taste

Now, let's get started.

1. Thoroughly rinse the rice until the water runs clear, then soak it in hot water for about 10 minutes. Drain and set it aside.

2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent.

3. Add the minced garlic and ginger and cook for a minute until fragrant.

4. Incorporate the blended pepper and tomato paste. Cook, stirring occasionally, until the mixture thickens, and the oil begins to separate. This typically takes about 10-15 minutes.

5. Add the thyme, curry powder, white pepper, and bay leaves. Stir well to blend the spices with the pepper and tomato mixture.

6. Add the washed rice and stir to coat the rice with the tomato and pepper mixture. Allow it to cook for approximately 5 minutes, stirring occasionally.

7. Pour in the chicken or vegetable broth. Reduce the heat to low, cover the pot, and let the rice simmer until it becomes tender and the liquid is absorbed. This may take 25-30 minutes.

8. About 10 minutes before the rice is fully cooked, add the diced carrots and green peas. If you prefer, you can also include some fried or grilled chicken or fish for added protein.

9. Taste the dish and adjust the seasoning by adding salt.

10. Once the rice is cooked, and the vegetables are tender, remove the bay leaves and fluff the rice with a fork.
